Tuscan Butter Gnocchi

Ingredients

  • 4 tbsp butter
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 cups halved cherry tomatoes
  • 1 tsp dried oregano
  • 2 tbsp kosher salt, plus more
  • Freshly ground black pepper
  • Pinch red pepper flakes
  • 4 cups baby spinach
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan
  • 1/4 cup chopped fresh herbs (such as basil and parsley), plus more for garnish
  • 2 (17.5 oz) packages gnocchi
  • 1 cup shredded mozzarella

Steps

  1. Preheat broiler to medium.
  2. In a large oven-safe skillet over medium heat, melt butter. Add garlic and tomato paste; cook, stirring constantly, until tomato paste darkens and starts to stick to the pan, 2-3 minutes.
  3. Add cherry tomatoes, oregano, salt, pepper, and red pepper flakes. Cook until tomatoes begin to burst.
  4. Add spinach and cook until it begins to wilt.
  5. Stir in broth, heavy cream, Parmesan, and chopped herbs. Bring to a simmer, then reduce heat to low and simmer until sauce slightly reduces, about 3 minutes.
  6. Meanwhile, bring a large pot of water to a boil and stir in 2 tablespoons salt. Add gnocchi and cook, stirring occasionally, until it floats to the top, about 2 minutes.
  7. Drain gnocchi and add to the sauce, tossing to coat.
  8. Top with mozzarella and broil until cheese is melted, 3-5 minutes.
  9. Garnish with more herbs and serve.
