Southern Baked Mac and Cheese

Ingredients
- 1/2 cup (1 stick) unsalted butter, melted, plus more for dish
- Kosher salt
- 1 lb macaroni
- Freshly ground black pepper
- 4 cups shredded extra-sharp cheddar, divided
- 2 cups shredded Colby Jack-cheddar blend
- 3 large eggs
- 2 cups whole milk
Steps
- Preheat oven to 350°F. Grease a large, deep baking dish with butter.
- Cook macaroni in a large pot of boiling salted water until just al dente, according to package instructions. Drain and rinse with cold water.
- Toss cooked pasta with melted butter in a large bowl; season with salt and pepper. Stir in 2 cups of the cheddar.
- Spread half of the macaroni mixture into the prepared baking dish. Sprinkle Colby Jack-cheddar blend over the top, then add the remaining macaroni mixture in a second layer.
- Beat eggs and milk together in a medium bowl, then pour evenly over the macaroni mixture.
- Cover the dish with foil and bake for 25 to 35 minutes, until cheese is melted and edges are bubbling. Do not overbake; it may still be slightly jiggly.
- Turn on the broiler. Top with the remaining 2 cups of cheddar and broil, watching closely, for about 3 minutes until melted and golden.
- Let cool slightly to firm up before serving.
