Southern Baked Mac and Cheese

Ingredients

  • 1/2 cup (1 stick) unsalted butter, melted, plus more for dish
  • Kosher salt
  • 1 lb macaroni
  • Freshly ground black pepper
  • 4 cups shredded extra-sharp cheddar, divided
  • 2 cups shredded Colby Jack-cheddar blend
  • 3 large eggs
  • 2 cups whole milk

Steps

  1. Preheat oven to 350°F. Grease a large, deep baking dish with butter.
  2. Cook macaroni in a large pot of boiling salted water until just al dente, according to package instructions. Drain and rinse with cold water.
  3. Toss cooked pasta with melted butter in a large bowl; season with salt and pepper. Stir in 2 cups of the cheddar.
  4. Spread half of the macaroni mixture into the prepared baking dish. Sprinkle Colby Jack-cheddar blend over the top, then add the remaining macaroni mixture in a second layer.
  5. Beat eggs and milk together in a medium bowl, then pour evenly over the macaroni mixture.
  6. Cover the dish with foil and bake for 25 to 35 minutes, until cheese is melted and edges are bubbling. Do not overbake; it may still be slightly jiggly.
  7. Turn on the broiler. Top with the remaining 2 cups of cheddar and broil, watching closely, for about 3 minutes until melted and golden.
  8. Let cool slightly to firm up before serving.
