Garlic Butter Cheeseburger Skewers

Ingredients
- 1 1/2 lb ground beef
- 1 1/2 tsp steak seasoning
- 4 garlic cloves, finely chopped, divided
- Kosher salt
- 4 tbsp unsalted butter, melted
- 1 tbsp fresh parsley, chopped
- Neutral oil, for grill
- 3-4 slices American cheese
- 4 hot dog buns
- 1/2 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp ketchup
- 1/2 tsp smoked paprika
- Green leaf lettuce, for serving
- Tomato slices, for serving
- Red onion slices, for serving
- 4 wooden skewers
Steps
- Soak wooden skewers in water for 20 minutes.
- In a large bowl, combine ground beef, steak seasoning, half the garlic, and 1 tsp salt; mix gently without overworking.
- Divide meat into 4 portions, form into logs, and insert a skewer into the center of each. Freeze 15-30 minutes until cold.
- In a small bowl, mix melted butter, parsley, a pinch of salt, and remaining garlic to make garlic butter.
- Preheat a grill or grill pan to medium-high heat and brush grates with oil.
- Grill skewers, rotating every 1-2 minutes, until browned on all sides and internal temperature reaches 160°F, about 5-6 minutes. Transfer to a platter.
- Brush skewers with half the garlic butter, top with cheese slices, and tent with foil to melt cheese.
- Reduce grill heat to low. Brush hot dog buns with remaining garlic butter and toast on the grill, flipping occasionally, until golden, 2-3 minutes.
- In a small bowl, mix mayonnaise, Dijon mustard, ketchup, and smoked paprika to make sauce.
- Remove skewers if desired, place burgers in buns, and serve with sauce and toppings.
