Creamsicle Fluff

Ingredients

  • 1 (10-oz.) can mandarin oranges
  • 1 (3-oz.) box orange gelatin
  • 1 cup boiling water
  • 1 (3.4-oz.) box instant vanilla pudding mix
  • 1 1/2 cups mini marshmallows
  • 1 (8-oz.) container Cool Whip, divided

Steps

  1. Drain oranges, reserving juice; measure out 1/2 cup of the juice. Cut oranges in half.
  2. In a large bowl, whisk orange gelatin with boiling water until dissolved. Whisk in the reserved 1/2 cup orange juice. Refrigerate about 15 minutes, until cold.
  3. Whisk pudding mix into the chilled gelatin mixture; it should still be loose. Refrigerate 10-15 minutes more, until soft-set.
  4. Fold in marshmallows, oranges, and half of the Cool Whip until combined.
  5. Fold in remaining Cool Whip until just a few streaks remain.
  6. Transfer to a serving bowl, cover loosely, and refrigerate at least 4 hours, preferably overnight.
  7. Uncover and serve cold.
