Blackberry Cobbler

Ingredients

  • 6 cups fresh blackberries
  • 1/2 cup granulated sugar
  • 1/2 lemon, zested and juiced
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • Pinch of kosher salt
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp kosher salt
  • 4 tbsp unsalted butter, cubed
  • 1/4 cup whole milk
  • 2 large eggs
  • Coarse sugar, for sprinkling
  • Vanilla ice cream, for serving

Steps

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine blackberries, sugar, lemon zest, lemon juice, cornstarch, vanilla, and salt. Toss to coat and pour into a baking dish.
  3. In a separate bowl, whisk together flour, sugar, baking powder, and salt.
  4. Cut in cold butter until mixture resembles coarse crumbs.
  5. Whisk milk and eggs together, then stir into the flour mixture until just combined to form a batter.
  6. Drop spoonfuls of the batter over the blackberry filling.
  7. Sprinkle the top with coarse sugar.
  8. Bake until the topping is golden brown and the filling is bubbling, about 45-55 minutes.
  9. Let cool slightly before serving with vanilla ice cream.
