Blackberry Cobbler

Ingredients
- 6 cups fresh blackberries
- 1/2 cup granulated sugar
- 1/2 lemon, zested and juiced
- 2 tbsp cornstarch
- 1 tsp vanilla extract
- Pinch of kosher salt
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 1/2 tsp baking powder
- 1/2 tsp kosher salt
- 4 tbsp unsalted butter, cubed
- 1/4 cup whole milk
- 2 large eggs
- Coarse sugar, for sprinkling
- Vanilla ice cream, for serving
Steps
- Preheat oven to 375°F (190°C).
- In a large bowl, combine blackberries, sugar, lemon zest, lemon juice, cornstarch, vanilla, and salt. Toss to coat and pour into a baking dish.
- In a separate bowl, whisk together flour, sugar, baking powder, and salt.
- Cut in cold butter until mixture resembles coarse crumbs.
- Whisk milk and eggs together, then stir into the flour mixture until just combined to form a batter.
- Drop spoonfuls of the batter over the blackberry filling.
- Sprinkle the top with coarse sugar.
- Bake until the topping is golden brown and the filling is bubbling, about 45-55 minutes.
- Let cool slightly before serving with vanilla ice cream.
