Grilled Zucchini

Ingredients
- 1 tbsp extra-virgin olive oil, plus more for grill
- 2 medium zucchini, sliced into 1/2-inch-thick strips
- 1/2 tsp finely grated lemon zest
- 1/4 tsp crushed red pepper flakes, plus more for serving
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 4 basil leaves, torn
Steps
- Preheat a grill or grill pan to medium-high heat; clean and oil the grates.
- Toss zucchini with olive oil, lemon zest, and red pepper flakes; season with salt and pepper.
- Place zucchini on the grill, cover, and cook 3 minutes.
- Flip, cover, and continue grilling 2-3 minutes more until char marks form and zucchini is fork-tender.
- Transfer to a platter and top with torn basil and extra red pepper flakes.
