Grilled Zucchini

Ingredients

  • 1 tbsp extra-virgin olive oil, plus more for grill
  • 2 medium zucchini, sliced into 1/2-inch-thick strips
  • 1/2 tsp finely grated lemon zest
  • 1/4 tsp crushed red pepper flakes, plus more for serving
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 4 basil leaves, torn

Steps

  1. Preheat a grill or grill pan to medium-high heat; clean and oil the grates.
  2. Toss zucchini with olive oil, lemon zest, and red pepper flakes; season with salt and pepper.
  3. Place zucchini on the grill, cover, and cook 3 minutes.
  4. Flip, cover, and continue grilling 2-3 minutes more until char marks form and zucchini is fork-tender.
  5. Transfer to a platter and top with torn basil and extra red pepper flakes.
