Tres Leches Cake

Ingredients

  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 5 large eggs, separated
  • 1 cup granulated sugar, divided
  • 1/3 cup whole milk
  • 1 teaspoon vanilla extract
  • 12 oz can evaporated milk
  • 14 oz can sweetened condensed milk
  • 1/4 cup whole milk
  • 1 pint heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • ground cinnamon, for topping

Steps

  1. Preheat oven to 350°F.
  2. In a medium bowl, combine flour, baking powder, and salt. Separate the eggs into two other bowls.
  3. Beat egg yolks with 3/4 cup sugar until pale yellow. Mix in 1/3 cup milk and vanilla. Pour over the flour mixture and stir gently until just combined.
  4. Beat egg whites until stiff peaks form, gradually adding remaining 1/4 cup sugar. Gently fold into the batter.
  5. Pour batter into an ungreased pan and smooth into an even layer. Bake 25-35 minutes, until a toothpick inserted in the center comes out clean. Let cool completely.
  6. Combine evaporated milk, sweetened condensed milk, and whole milk in a bowl. Poke holes all over the cooled cake with a fork.
  7. Slowly pour the milk mixture over the cake, covering the edges. Refrigerate at least 1 hour or overnight to let it soak.
  8. Whip the heavy cream, powdered sugar, and vanilla until stiff peaks form. Spread over the top of the cake.
  9. Sprinkle cinnamon on top. Serve with fresh sliced strawberries, if desired.
