Tres Leches Cake

Ingredients
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 5 large eggs, separated
- 1 cup granulated sugar, divided
- 1/3 cup whole milk
- 1 teaspoon vanilla extract
- 12 oz can evaporated milk
- 14 oz can sweetened condensed milk
- 1/4 cup whole milk
- 1 pint heavy whipping cream
- 3 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- ground cinnamon, for topping
Steps
- Preheat oven to 350°F.
- In a medium bowl, combine flour, baking powder, and salt. Separate the eggs into two other bowls.
- Beat egg yolks with 3/4 cup sugar until pale yellow. Mix in 1/3 cup milk and vanilla. Pour over the flour mixture and stir gently until just combined.
- Beat egg whites until stiff peaks form, gradually adding remaining 1/4 cup sugar. Gently fold into the batter.
- Pour batter into an ungreased pan and smooth into an even layer. Bake 25-35 minutes, until a toothpick inserted in the center comes out clean. Let cool completely.
- Combine evaporated milk, sweetened condensed milk, and whole milk in a bowl. Poke holes all over the cooled cake with a fork.
- Slowly pour the milk mixture over the cake, covering the edges. Refrigerate at least 1 hour or overnight to let it soak.
- Whip the heavy cream, powdered sugar, and vanilla until stiff peaks form. Spread over the top of the cake.
- Sprinkle cinnamon on top. Serve with fresh sliced strawberries, if desired.
