Creamy Chicken and Gnocchi

Ingredients

  • 2 tablespoons olive oil
  • 3 boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 1/2 cups chicken broth
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup milk
  • 1/2 cup cream
  • 1 cup grated Parmesan cheese
  • 1 lb gnocchi
  • 1/4 cup fresh sliced basil leaves, plus more for garnish

Steps

  1. Cook gnocchi according to package instructions; optionally sauté in butter until golden on both sides.
  2. Season chicken breasts with salt, pepper, and garlic powder.
  3. Sear chicken in olive oil 5-6 minutes per side until golden and cooked through (165°F). Remove, let rest, and chop into bite-size pieces.
  4. In the same pan, melt butter and sauté minced garlic for 30 seconds.
  5. Stir in flour until smooth, then add chicken broth, Italian seasoning, red pepper flakes, and sun-dried tomatoes; cook until thickened.
  6. Lower heat and stir in milk, cream, and Parmesan cheese until combined.
  7. Add cooked chicken and gnocchi to the sauce; stir in fresh basil.
  8. Serve garnished with extra Parmesan and basil if desired.
