Creamy Chicken and Gnocchi

Ingredients
- 2 tablespoons olive oil
- 3 boneless skinless chicken breasts
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 3 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons flour
- 1 1/2 cups chicken broth
- 1/2 cup sun-dried tomatoes, drained and chopped
- 1 teaspoon Italian seasoning
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1/2 cup milk
- 1/2 cup cream
- 1 cup grated Parmesan cheese
- 1 lb gnocchi
- 1/4 cup fresh sliced basil leaves, plus more for garnish
Steps
- Cook gnocchi according to package instructions; optionally sauté in butter until golden on both sides.
- Season chicken breasts with salt, pepper, and garlic powder.
- Sear chicken in olive oil 5-6 minutes per side until golden and cooked through (165°F). Remove, let rest, and chop into bite-size pieces.
- In the same pan, melt butter and sauté minced garlic for 30 seconds.
- Stir in flour until smooth, then add chicken broth, Italian seasoning, red pepper flakes, and sun-dried tomatoes; cook until thickened.
- Lower heat and stir in milk, cream, and Parmesan cheese until combined.
- Add cooked chicken and gnocchi to the sauce; stir in fresh basil.
- Serve garnished with extra Parmesan and basil if desired.
