Best Smash Burgers

Ingredients

  • 1 1/2 lbs ground beef (80/20)
  • salt and pepper
  • 12 slices American cheese
  • 6 hamburger buns
  • 3/4 cup mayonnaise
  • 3 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1-2 tablespoons pickle juice, to taste
  • 1-2 tablespoons BBQ sauce, to taste
  • Thinly sliced onions, red or white
  • Dill pickle slices
  • Lettuce
  • Sliced tomato
  • Cooked bacon

Steps

  1. Divide ground beef into 12 loose 2 oz portions, without packing tightly. Keep refrigerated until ready to cook.
  2. Mix mayonnaise, ketchup, mustard, and pickle juice in a small bowl. Taste and add BBQ sauce as desired. Set aside as burger sauce.
  3. Heat a cast iron skillet or griddle over high heat until very hot, almost smoking.
  4. Optionally butter the buns and toast in the pan until golden, then set aside.
  5. Place 2-4 beef balls on the hot surface and immediately smash thin, about 1/4 inch thick, using a sturdy spatula or burger press.
  6. Season the patties with salt and pepper right after smashing.
  7. Cook undisturbed for 30 seconds to 1 minute, until edges are crispy.
  8. Scrape under the patties, flip, and immediately add cheese. Cook 30-60 seconds more, then remove to a plate.
  9. Spread burger sauce on the bottom bun, stack two patties per burger, add desired toppings, and finish with the top bun.
