Lobster Roll

Ingredients
- 1 lb cooked lobster meat
- 2-3 tablespoons mayonnaise
- 1 celery rib, finely diced (optional)
- ½ teaspoon lemon zest
- ½ tablespoon lemon juice
- 1 tablespoon chives
- 1 dash hot sauce
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
- 4 tablespoons butter
- 4 New England-style split top buns (or hot dog buns)
- lettuce leaves (optional, for serving)
Steps
- Drain lobster meat and pat dry. Cut into chunky pieces if needed.
- In a bowl, combine celery, mayonnaise, lemon zest, lemon juice, chives, hot sauce, salt, and pepper. Set aside.
- Melt butter in a skillet over medium heat. Add lobster meat and toss to coat, warming for about 2 minutes.
- Remove lobster with a slotted spoon and add to the bowl with the dressing. Toss gently to coat.
- Wipe skillet clean and melt remaining 2 tablespoons butter over medium heat. Dip both flat sides of buns in melted butter and toast in the pan until golden.
- Open buns, add a lettuce leaf if desired, then fill with lobster mixture. Garnish with chives and serve immediately.
