Oven Baked BBQ Ribs

Ingredients
- 2 tbsp kosher salt
- 1 tbsp black pepper
- 1 tbsp brown sugar
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp smoked paprika
- 2 racks baby back ribs (about 5 lb)
- 2 tbsp salted butter
- 2 garlic cloves, minced
- 1/2 onion, diced
- 1/2 tsp kosher salt, plus more to taste
- 1 (20 oz) bottle ketchup
- 1/3 cup molasses
- 1/3 cup brown sugar
- 1/3 cup apple cider vinegar
- 1 tbsp yellow mustard
- 1 tbsp Worcestershire sauce
Steps
- Preheat oven to 300°F. Mix salt, black pepper, brown sugar, garlic powder, onion powder, and smoked paprika in a small bowl.
- Flip ribs bone-side up. Loosen and remove the membrane with a knife. Rub spice mix on both sides of the ribs.
- Wrap both racks together in a large piece of foil, sealing edges to make an airtight package. Place on a rimmed baking sheet and roast 2 to 2½ hours.
- Melt butter in a saucepan over medium heat. Add garlic, onion, and salt; cook until softened.
- Add ketchup, molasses, brown sugar, vinegar, mustard, and Worcestershire sauce. Bring to a simmer, then reduce heat to low and cook until thickened, about 20 minutes.
- Let sauce cool 5 minutes, then puree until smooth. Thin with water if needed and season with salt.
- When ribs are done, transfer to a foil-lined baking sheet and brush with sauce on both sides (1 to 1½ cups).
- Preheat broiler. Broil ribs until charred in spots, about 5 minutes.
- Brush ribs with more sauce and continue broiling until bubbling, about 3 more minutes. Serve with additional sauce.
