Oven Baked BBQ Ribs

Ingredients

  • 2 tbsp kosher salt
  • 1 tbsp black pepper
  • 1 tbsp brown sugar
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp smoked paprika
  • 2 racks baby back ribs (about 5 lb)
  • 2 tbsp salted butter
  • 2 garlic cloves, minced
  • 1/2 onion, diced
  • 1/2 tsp kosher salt, plus more to taste
  • 1 (20 oz) bottle ketchup
  • 1/3 cup molasses
  • 1/3 cup brown sugar
  • 1/3 cup apple cider vinegar
  • 1 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce

Steps

  1. Preheat oven to 300°F. Mix salt, black pepper, brown sugar, garlic powder, onion powder, and smoked paprika in a small bowl.
  2. Flip ribs bone-side up. Loosen and remove the membrane with a knife. Rub spice mix on both sides of the ribs.
  3. Wrap both racks together in a large piece of foil, sealing edges to make an airtight package. Place on a rimmed baking sheet and roast 2 to 2½ hours.
  4. Melt butter in a saucepan over medium heat. Add garlic, onion, and salt; cook until softened.
  5. Add ketchup, molasses, brown sugar, vinegar, mustard, and Worcestershire sauce. Bring to a simmer, then reduce heat to low and cook until thickened, about 20 minutes.
  6. Let sauce cool 5 minutes, then puree until smooth. Thin with water if needed and season with salt.
  7. When ribs are done, transfer to a foil-lined baking sheet and brush with sauce on both sides (1 to 1½ cups).
  8. Preheat broiler. Broil ribs until charred in spots, about 5 minutes.
  9. Brush ribs with more sauce and continue broiling until bubbling, about 3 more minutes. Serve with additional sauce.
