Kansas City-Style BBQ Ribs

Ingredients

  • 2 tbsp kosher salt
  • 1 tbsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp paprika
  • 1 tsp cayenne pepper
  • 1/3 cup plus 1 tbsp packed light brown sugar
  • 2 racks St. Louis-style spareribs or baby back ribs (about 6 lb total)
  • 1 tbsp vegetable oil, plus more for the grill
  • 2 garlic cloves, finely chopped
  • 1/2 onion, chopped
  • 1 1/2 cups ketchup
  • 1/3 cup molasses
  • 1/4 cup apple cider vinegar
  • 3 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce

Steps

  1. Preheat oven to 300°F. Combine salt, black pepper, garlic powder, onion powder, paprika, cayenne pepper, and 1 tablespoon brown sugar in a bowl.
  2. Flip ribs bone-side up, loosen and remove the membrane with a paring knife.
  3. Rub the spice blend on both sides of each rack of ribs.
  4. Wrap each rack individually in a double layer of foil and place on rimmed baking sheets.
  5. Bake until the meat easily pulls apart with a fork but racks still hold together, about 2 hours 15 minutes to 2 hours 30 minutes.
  6. Meanwhile, heat vegetable oil in a saucepan over medium heat. Add garlic and onion and cook, stirring, until soft, 2-3 minutes.
  7. Reduce heat to low and stir in ketchup, molasses, vinegar, mustard, Worcestershire sauce, and remaining brown sugar. Simmer, stirring occasionally, until slightly thickened, about 20 minutes.
  8. Let sauce cool, then puree with a blender or immersion blender.
  9. Set aside 2/3 cup sauce for brushing; reserve the rest for serving. Refrigerate both.
  10. Preheat a grill to medium and oil the grates. Unwrap ribs and brush each side with reserved brushing sauce.
  11. Grill ribs meat-side down until they release easily and are well marked, 3-4 minutes. Flip and grill the other side 2-3 minutes.
  12. Alternatively, broil ribs meat-side up on a foil-lined baking sheet, brushing with sauce, until charred in spots, about 5 minutes, then brush again and broil until bubbling, about 3 more minutes.
  13. Transfer ribs to a cutting board, brush generously with more sauce, and slice.
  14. Serve with remaining sauce on the side.
