Pork Burgers with Grilled Peaches and Feta

Ingredients
- 1 small onion, grated
- 1/4 cup panko breadcrumbs
- 2 tbsp milk
- 1 tbsp Worcestershire sauce
- 1 tsp black pepper
- 2 1/4 tsp kosher salt, divided
- 2 lb ground pork
- 1/4 cup mayonnaise
- 2 tbsp Dijon mustard
- 3 ripe peaches, halved and pitted
- 1 tbsp vegetable oil, plus more for the grill
- 6 oz feta cheese, cut into 6 slices
- 6 hamburger buns, split and toasted
- Pickled red onions, for topping
- Fresh basil leaves, for topping
- Potato chips, for serving
Steps
- In a large bowl, combine grated onion, panko, milk, Worcestershire sauce, pepper, and 2 teaspoons salt. Let sit about 5 minutes until liquid is absorbed.
- Add ground pork to the panko mixture and gently mix until just combined.
- Divide the mixture into 6 balls (about 6 oz each) and press into 1-inch-thick patties, about 4 1/2 inches wide.
- In a small bowl, combine mayonnaise and Dijon mustard; set aside.
- Brush peach halves with vegetable oil and sprinkle with remaining 1/4 teaspoon salt.
- Preheat a grill or grill pan to medium-high and oil the grates.
- Grill peaches cut-side down until marked, 3 to 5 minutes, then flip and cook 2 to 3 more minutes until tender. Remove and let cool slightly, then slice.
- Grill the patties, covered, until well marked and internal temperature reaches 160°F, about 6 to 7 minutes per side.
- Top each patty with a slice of feta during the last minute of cooking, covering to melt.
- Spread the mayonnaise-mustard mixture on the top and bottom buns.
- Place a burger patty on each bottom bun, then top with pickled onions, peach slices, and basil leaves. Add the top bun.
- Serve burgers with potato chips.
