Sausage Breakfast Casserole

Ingredients

  • Butter or nonstick cooking spray, for greasing
  • 1 lb breakfast sausage
  • 1 red bell pepper, chopped
  • 4 green onions, chopped, white and green parts separated
  • 10 eggs
  • 1 1/4 cups heavy cream
  • 1 tbsp Dijon mustard
  • 2 tsp hot sauce (optional)
  • 1 1/2 tsp kosher salt
  • 1 tsp black pepper
  • 2 cups shredded sharp cheddar cheese, divided
  • 30 oz frozen shredded hash browns, thawed

Steps

  1. Preheat oven to 350°F. Grease a 13x9-inch (3-quart) baking dish with butter or cooking spray.
  2. Heat a large skillet over medium-high heat. Cook sausage, breaking it into small pieces, until no pink remains, 6-8 minutes.
  3. Add bell pepper and the white and light green parts of the green onions to the skillet; cook 3 more minutes. Transfer mixture to a plate to cool slightly.
  4. In a large bowl, whisk together eggs, heavy cream, mustard, hot sauce (if using), salt, black pepper, and half of the remaining green onion tops.
  5. Fold in 1 1/2 cups of cheese, the hash browns, and the sausage mixture. Pour into the prepared baking dish and spread into an even layer.
  6. Cover with foil and bake at 350°F for 50 minutes.
  7. Remove foil, top with remaining 1/2 cup cheese, and increase oven temperature to 400°F. Bake until center is set and top is slightly golden, 10-15 more minutes.
  8. Let rest 10 minutes, sprinkle with remaining green onion tops, and serve.
