Shrimp Scampi

Ingredients

  • 2 tbsp olive oil
  • 4 tbsp butter
  • 1/2 onion, finely diced
  • 4 cloves garlic, minced
  • 1 lb large shrimp, peeled and deveined
  • Juice of 2 lemons
  • 1/2 cup white wine
  • Salt and black pepper, to taste
  • 4 dashes hot sauce, plus more to taste
  • 8 oz angel hair pasta
  • 1/2 cup grated parmesan cheese
  • Chopped fresh basil, to taste
  • Chopped fresh parsley, to taste

Steps

  1. Bring a pot of water to a boil for the pasta.
  2. In a large skillet, heat olive oil and melt butter over medium heat.
  3. Add onion and garlic; cook 2-3 minutes until onion is translucent.
  4. Add shrimp and cook a couple of minutes, stirring.
  5. Squeeze in lemon juice, then add wine, salt, pepper, and hot sauce. Stir and reduce heat to low.
  6. Cook angel hair pasta in the boiling water until al dente. Drain, reserving 1-2 cups of pasta water.
  7. Remove skillet from heat, add pasta, and toss, adding a splash of pasta water if needed to thin the sauce.
  8. Taste and adjust seasoning with salt and pepper.
  9. Top with parmesan, parsley, and basil. Serve immediately.
