Shrimp Scampi

Ingredients
- 2 tbsp olive oil
- 4 tbsp butter
- 1/2 onion, finely diced
- 4 cloves garlic, minced
- 1 lb large shrimp, peeled and deveined
- Juice of 2 lemons
- 1/2 cup white wine
- Salt and black pepper, to taste
- 4 dashes hot sauce, plus more to taste
- 8 oz angel hair pasta
- 1/2 cup grated parmesan cheese
- Chopped fresh basil, to taste
- Chopped fresh parsley, to taste
Steps
- Bring a pot of water to a boil for the pasta.
- In a large skillet, heat olive oil and melt butter over medium heat.
- Add onion and garlic; cook 2-3 minutes until onion is translucent.
- Add shrimp and cook a couple of minutes, stirring.
- Squeeze in lemon juice, then add wine, salt, pepper, and hot sauce. Stir and reduce heat to low.
- Cook angel hair pasta in the boiling water until al dente. Drain, reserving 1-2 cups of pasta water.
- Remove skillet from heat, add pasta, and toss, adding a splash of pasta water if needed to thin the sauce.
- Taste and adjust seasoning with salt and pepper.
- Top with parmesan, parsley, and basil. Serve immediately.
