Blueberry Crumb Cake

Ingredients

  • 2 cups all-purpose flour
  • 2 1/4 tsp baking powder
  • 1/2 tsp kosher salt
  • 5 tbsp salted butter, room temperature
  • 3/4 cup sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 3/4 cup whole milk
  • 2 cups blueberries
  • 6 tbsp salted butter
  • 1/2 cup all-purpose flour
  • 1/2 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 1/2 cup plus 2 tbsp sugar
  • softened butter, for serving

Steps

  1. Preheat oven to 350°F and grease a 13x9-inch baking pan.
  2. Combine flour, baking powder, and salt in a bowl; set aside.
  3. Cream butter and sugar with an electric mixer until fluffy, about 3-4 minutes.
  4. Add egg and mix until combined, then mix in vanilla.
  5. Add the flour mixture alternately with the milk, mixing until just incorporated.
  6. Fold in blueberries until evenly distributed.
  7. Pour batter into the prepared pan.
  8. For the topping, combine butter, flour, cinnamon, salt, and 1/2 cup sugar; cut together with two knives or a pastry cutter until crumbly.
  9. Sprinkle topping evenly over the batter.
  10. Bake 40-45 minutes until golden brown.
  11. Sprinkle with remaining 2 tablespoons sugar.
  12. Cut into squares and serve with softened butter.
