Killer Club Sandwich

Ingredients

  • 8 slices bacon, cut in half
  • 12 slices sandwich bread
  • 2 tbsp basil pesto
  • 1/2 cup mayonnaise
  • 2 tbsp sun-dried tomato pesto
  • 8 oz shaved ham
  • Romaine or green leaf lettuce
  • 4 avocados, sliced
  • 8 oz shaved turkey
  • 4 slices cheese (such as Swiss or mozzarella)
  • Potato chips, for serving

Steps

  1. Cook bacon in a large skillet over medium heat, turning occasionally, until crispy, about 7 minutes. Transfer to a paper towel-lined plate.
  2. Toast the bread slices until lightly golden brown.
  3. Mix basil pesto with 1/4 cup mayonnaise in one bowl. Mix sun-dried tomato pesto with the remaining 1/4 cup mayonnaise in another bowl.
  4. Spread basil pesto mayonnaise on one side of 2 bread slices. On one slice, layer ham and lettuce. On the other, layer avocado slices and bacon. Place the avocado-bacon slice ingredient-side down onto the ham slice.
  5. Spread sun-dried tomato pesto mayonnaise on top of the sandwich, then add turkey and lettuce.
  6. Spread sun-dried tomato pesto mayonnaise on one side of a third bread slice; top with remaining avocado, bacon, and cheese. Place this slice ingredient-side down onto the sandwich to close it.
  7. Repeat to build remaining sandwiches with the rest of the ingredients.
  8. Cut each sandwich diagonally in half, then in fourths. Secure with toothpicks if needed and serve with chips.
