Blueberry Banana Muffins

Ingredients
- 1/2 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 2 large eggs, room temperature, lightly beaten
- 1 cup mashed banana (about 3 medium or 2 large ripe bananas)
- 1 tsp vanilla extract
- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cups fresh or frozen blueberries
- 1 Tbsp flour, for tossing blueberries
- 1-2 Tbsp coarse sugar, optional
Steps
- Preheat oven to 425°F and line a 12-count muffin tin with paper liners.
- Cream butter and sugar together with an electric mixer. Add eggs and mix until combined.
- Stir in mashed bananas and vanilla until blended.
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
- Add dry ingredients to the batter and mix just until moistened; do not overmix.
- Toss blueberries with 1 Tbsp flour, then gently fold into the batter.
- Divide batter evenly among muffin cups, filling almost to the top. Sprinkle tops with coarse sugar if using.
- Bake at 425°F for 5 minutes, then reduce oven temperature to 350°F without opening the door and bake 18-22 minutes more, until golden and a toothpick inserted in the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
