Blueberry Banana Muffins

Ingredients

  • 1/2 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 large eggs, room temperature, lightly beaten
  • 1 cup mashed banana (about 3 medium or 2 large ripe bananas)
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups fresh or frozen blueberries
  • 1 Tbsp flour, for tossing blueberries
  • 1-2 Tbsp coarse sugar, optional

Steps

  1. Preheat oven to 425°F and line a 12-count muffin tin with paper liners.
  2. Cream butter and sugar together with an electric mixer. Add eggs and mix until combined.
  3. Stir in mashed bananas and vanilla until blended.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  5. Add dry ingredients to the batter and mix just until moistened; do not overmix.
  6. Toss blueberries with 1 Tbsp flour, then gently fold into the batter.
  7. Divide batter evenly among muffin cups, filling almost to the top. Sprinkle tops with coarse sugar if using.
  8. Bake at 425°F for 5 minutes, then reduce oven temperature to 350°F without opening the door and bake 18-22 minutes more, until golden and a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
