Fruit Salad with Citrus and Honey

Ingredients

  • 2 cups strawberries, hulled and quartered
  • 2 cups pineapple, cut into bite-sized pieces
  • 1 1/2 cups blueberries
  • 1 1/2 cups red grapes, halved if large
  • 1 1/2 cups kiwi, peeled and sliced
  • 1 1/2 cups mandarin oranges or clementines, peeled and segmented
  • 2-3 tablespoons honey, or to taste
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 2 tablespoons finely chopped mint, optional

Steps

  1. Wash and dry all fruit. Peel, hull, and cut into similar-sized bite pieces.
  2. Place prepared fruit in a large mixing bowl.
  3. In a small bowl, stir together honey, lime juice, and lime zest. Stir in mint if using.
  4. Drizzle dressing over fruit just before serving and toss gently to coat.
  5. Serve immediately, or cover and refrigerate for up to 30 minutes before serving.
