Fruit Salad with Citrus and Honey

Ingredients
- 2 cups strawberries, hulled and quartered
- 2 cups pineapple, cut into bite-sized pieces
- 1 1/2 cups blueberries
- 1 1/2 cups red grapes, halved if large
- 1 1/2 cups kiwi, peeled and sliced
- 1 1/2 cups mandarin oranges or clementines, peeled and segmented
- 2-3 tablespoons honey, or to taste
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 2 tablespoons finely chopped mint, optional
Steps
- Wash and dry all fruit. Peel, hull, and cut into similar-sized bite pieces.
- Place prepared fruit in a large mixing bowl.
- In a small bowl, stir together honey, lime juice, and lime zest. Stir in mint if using.
- Drizzle dressing over fruit just before serving and toss gently to coat.
- Serve immediately, or cover and refrigerate for up to 30 minutes before serving.
