Salmon Bowls

Ingredients
- 1 1/2 lb salmon fillet
- 1 tbsp olive oil or melted butter
- 1 tsp toasted sesame oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 3/4 tsp fine sea salt
- 1/2 tsp black pepper
- 1/2 tsp onion powder
- 4 cups cooked jasmine rice
- 3-4 Persian cucumbers, sliced
- 2 avocados, diced
- 1/4 cup green onions, sliced
- 1 tbsp sesame seeds
- 1 cup shelled edamame, cooked
- Lemon wedges, for serving
- 1/2 cup mayonnaise
- 1 tbsp sriracha sauce
- 1/2 tbsp honey
Steps
- Cook the jasmine rice according to package instructions to yield about 4 cups cooked rice.
- Pat salmon dry, remove skin if desired, and cut into 1 to 1 1/2-inch cubes.
- Toss salmon with olive oil and sesame oil in a mixing bowl.
- Mix garlic powder, paprika, salt, pepper, and onion powder; sprinkle over salmon and toss to coat evenly.
- Arrange salmon in a single layer in the air fryer basket, cooking in batches if needed.
- Air fry at 400°F for 7 to 9 minutes, until salmon is cooked through and flakes easily.
- Whisk together mayonnaise, sriracha, and honey until smooth to make the sauce.
- Divide warm rice among 4 bowls.
- Top each bowl with salmon, cucumber, avocado, and edamame.
- Drizzle with sauce and garnish with green onions and sesame seeds.
Notes
Salmon can also be cooked on the stovetop or in the oven instead of an air fryer.
