Salmon Bowls

Ingredients

  • 1 1/2 lb salmon fillet
  • 1 tbsp olive oil or melted butter
  • 1 tsp toasted sesame oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 3/4 tsp fine sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 4 cups cooked jasmine rice
  • 3-4 Persian cucumbers, sliced
  • 2 avocados, diced
  • 1/4 cup green onions, sliced
  • 1 tbsp sesame seeds
  • 1 cup shelled edamame, cooked
  • Lemon wedges, for serving
  • 1/2 cup mayonnaise
  • 1 tbsp sriracha sauce
  • 1/2 tbsp honey

Steps

  1. Cook the jasmine rice according to package instructions to yield about 4 cups cooked rice.
  2. Pat salmon dry, remove skin if desired, and cut into 1 to 1 1/2-inch cubes.
  3. Toss salmon with olive oil and sesame oil in a mixing bowl.
  4. Mix garlic powder, paprika, salt, pepper, and onion powder; sprinkle over salmon and toss to coat evenly.
  5. Arrange salmon in a single layer in the air fryer basket, cooking in batches if needed.
  6. Air fry at 400°F for 7 to 9 minutes, until salmon is cooked through and flakes easily.
  7. Whisk together mayonnaise, sriracha, and honey until smooth to make the sauce.
  8. Divide warm rice among 4 bowls.
  9. Top each bowl with salmon, cucumber, avocado, and edamame.
  10. Drizzle with sauce and garnish with green onions and sesame seeds.

Notes

Salmon can also be cooked on the stovetop or in the oven instead of an air fryer.
