Servings: 8 Prep: 7 minutes Cook: 3 minutes Total: 10 minutes

Ingredients

  • 1 1/2 cups granulated sugar
  • 8 cups filtered water, divided (1 cup cold, 7 cups to serve)
  • 1 1/2 cups lemon juice (about 8 medium or 6 large lemons)

Steps

  1. In a small saucepan, combine 1 cup water and 1 1/2 cups sugar. Heat over medium heat, stirring, until it just begins to simmer and sugar dissolves.
  2. Remove syrup from heat and let cool to room temperature. Transfer to a jar, cover, and refrigerate until ready to use.
  3. Juice lemons to yield 1 1/2 cups lemon juice.
  4. In a pitcher, combine 7 cups cold water, the lemon juice, and the chilled sugar syrup. Stir to combine, adjusting to taste if desired.
  5. Serve over ice.

Notes

Lemon juice and syrup can be refrigerated separately for up to 2 weeks before mixing.
