Classic Bruschetta

Ingredients
- 6 Roma tomatoes (1 1/2 lbs), diced
- 1/3 cup basil leaves, chopped
- 5 garlic cloves, divided
- 1 Tbsp balsamic vinegar
- 2 Tbsp extra virgin olive oil
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- balsamic glaze (optional)
- 1 baguette
- 3 Tbsp extra virgin olive oil
- 1/3 cup shredded parmesan cheese
Steps
- Dice the tomatoes and place them in a bowl.
- Mince 2 of the garlic cloves and add to the tomatoes.
- Add chopped basil, balsamic vinegar, 2 Tbsp olive oil, salt, and pepper to the tomatoes; stir to combine and set aside.
- Slice the baguette into 1/2-inch thick pieces.
- Brush both sides of each slice with 3 Tbsp olive oil and arrange on a baking sheet.
- Toast the baguette slices under a broiler or in a hot oven until golden, about 5-7 minutes, flipping once.
- Rub the toasted bread with the remaining garlic cloves while still warm.
- Top each toast with the tomato mixture.
- Sprinkle with shredded parmesan cheese.
- Drizzle with balsamic glaze, if desired, and serve immediately.
