Classic Bruschetta

Ingredients

  • 6 Roma tomatoes (1 1/2 lbs), diced
  • 1/3 cup basil leaves, chopped
  • 5 garlic cloves, divided
  • 1 Tbsp balsamic vinegar
  • 2 Tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • balsamic glaze (optional)
  • 1 baguette
  • 3 Tbsp extra virgin olive oil
  • 1/3 cup shredded parmesan cheese

Steps

  1. Dice the tomatoes and place them in a bowl.
  2. Mince 2 of the garlic cloves and add to the tomatoes.
  3. Add chopped basil, balsamic vinegar, 2 Tbsp olive oil, salt, and pepper to the tomatoes; stir to combine and set aside.
  4. Slice the baguette into 1/2-inch thick pieces.
  5. Brush both sides of each slice with 3 Tbsp olive oil and arrange on a baking sheet.
  6. Toast the baguette slices under a broiler or in a hot oven until golden, about 5-7 minutes, flipping once.
  7. Rub the toasted bread with the remaining garlic cloves while still warm.
  8. Top each toast with the tomato mixture.
  9. Sprinkle with shredded parmesan cheese.
  10. Drizzle with balsamic glaze, if desired, and serve immediately.
