Cucumber Tomato Avocado Salad

Ingredients

  • 1 lb Roma tomatoes, chopped
  • 1 English cucumber, sliced
  • 1/2 medium red onion, thinly sliced
  • 2 avocados, diced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1/4 cup cilantro, chopped
  • 1 tsp sea salt
  • 1/8 tsp black pepper

Steps

  1. Place chopped tomatoes, sliced cucumber, sliced red onion, diced avocado, and chopped cilantro in a large bowl.
  2. Drizzle with olive oil and lemon juice, then toss gently to combine.
  3. Just before serving, season with salt and pepper to taste and toss again.
