Smash Burger

Ingredients

  • 1 1/2 lbs ground beef (80/20), divided into 8 portions (3 oz each)
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste (optional)
  • 4 slices medium cheddar cheese
  • 1/3 cup mayonnaise
  • 1 tsp yellow mustard
  • 4 burger buns (brioche preferred)
  • 2 cups shredded iceberg lettuce
  • 1 large tomato, sliced
  • 1/2 red onion, sliced into thin rings
  • 2 dill pickles, cut into 12 slices

Steps

  1. Divide the ground beef into 8 equal portions, about 3 oz each, and shape into loose balls.
  2. Mix mayonnaise and yellow mustard together in a small bowl to make the sauce; set aside.
  3. Prepare toppings: shred lettuce, slice tomato, slice red onion, and slice pickles.
  4. Lightly toast the burger buns.
  5. Heat a large skillet or griddle over high heat until very hot.
  6. Place a beef ball on the skillet and immediately smash flat with a spatula or heavy object.
  7. Season the patty with salt, pepper, and garlic powder.
  8. Cook for about 2 minutes until a deep crust forms, then flip.
  9. Add a slice of cheese to each patty and cook for another 1-2 minutes until melted.
  10. Repeat with remaining beef portions to cook all patties.
  11. Spread the mayo-mustard sauce on the toasted buns.
  12. Layer lettuce, tomato, onion, and pickles on the bottom bun.
  13. Stack two cheese-topped patties on the toppings and cover with the top bun.
  14. Serve immediately while hot.
