Scrambled Eggs

Ingredients

  • 8 large eggs
  • 1/4 cup heavy cream
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 1/2 tablespoons unsalted butter
  • 1 tablespoon chopped fresh chives

Steps

  1. Whisk together eggs, heavy cream, 3/4 teaspoon salt, and 1/4 teaspoon pepper.
  2. Melt butter in a large nonstick skillet over medium-low heat.
  3. Add egg mixture and cook, stirring frequently, until eggs just begin to set.
  4. Continue cooking, stirring, until eggs are thickened with no visible liquid, about 3-5 minutes total.
  5. Serve immediately, garnished with chives if desired.
