Baked Zucchini Fries

Ingredients

  • 2 medium zucchini, quartered lengthwise
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 2 tablespoons chopped fresh parsley leaves

Steps

  1. Preheat oven to 425°F. Coat a cooling rack with nonstick spray and set it on a baking sheet.
  2. In a bowl, mix panko, Parmesan, and Italian seasoning; season with salt and pepper.
  3. Dredge each zucchini piece in flour, dip in beaten eggs, then coat in the panko mixture, pressing to adhere.
  4. Arrange zucchini on the prepared rack and bake for 20-22 minutes, until golden and crisp.
  5. Garnish with parsley and serve immediately.
