Baked Zucchini Fries

Ingredients
- 2 medium zucchini, quartered lengthwise
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- 2 tablespoons chopped fresh parsley leaves
Steps
- Preheat oven to 425°F. Coat a cooling rack with nonstick spray and set it on a baking sheet.
- In a bowl, mix panko, Parmesan, and Italian seasoning; season with salt and pepper.
- Dredge each zucchini piece in flour, dip in beaten eggs, then coat in the panko mixture, pressing to adhere.
- Arrange zucchini on the prepared rack and bake for 20-22 minutes, until golden and crisp.
- Garnish with parsley and serve immediately.
