Creamy Broccoli Salad

Ingredients

  • 4 slices bacon, diced
  • 5 cups coarsely chopped broccoli florets
  • 1/2 cup shredded sharp cheddar cheese
  • 1/3 cup cashews
  • 1/4 cup diced red onion
  • 1/4 cup dried cranberries
  • 1/3 cup mayonnaise
  • 1/4 cup milk
  • 2 tablespoons sugar
  • 1 tablespoon apple cider vinegar

Steps

  1. Cook bacon in a large skillet over medium-high heat until browned and crispy, about 6-8 minutes. Drain fat and transfer bacon to a paper towel-lined plate.
  2. In a small bowl, whisk together mayonnaise, milk, sugar, and apple cider vinegar to make the dressing.
  3. In a large bowl, combine broccoli, cheddar cheese, cashews, red onion, cranberries, and bacon.
  4. Add dressing to the bowl and toss gently to coat.
  5. Cover and chill at least 1 hour before serving.
