Korean Beef Tacos

Ingredients

  • 2 tablespoons brown sugar
  • 2 tablespoons reduced sodium soy sauce
  • 1 teaspoon sesame oil
  • 1/4 teaspoon crushed red pepper flakes
  • 1/8 teaspoon ground ginger
  • 2 teaspoons vegetable oil
  • 2 cloves garlic, minced
  • 8 ounces ground beef
  • 2 teaspoons sesame oil
  • 1 cup chopped kimchi
  • 1 teaspoon sugar
  • 1/4 cup mayonnaise
  • 1 tablespoon Sriracha
  • 2 teaspoons fresh lime juice
  • 12 mini flour tortillas
  • 1/4 cup diced red onion
  • 2 tablespoons chopped fresh cilantro
  • 1/4 teaspoon sesame seeds

Steps

  1. In a small bowl, whisk together brown sugar, soy sauce, 1 teaspoon sesame oil, red pepper flakes, and ground ginger to make the sauce.
  2. Heat vegetable oil in a skillet over medium-high heat. Add garlic and cook until fragrant, about 30 seconds.
  3. Add ground beef and cook, breaking it apart, until browned, about 3-4 minutes.
  4. Stir in the sauce and simmer until slightly thickened, about 1-2 minutes. Set aside.
  5. In a separate pan, heat 2 teaspoons sesame oil over medium heat. Add chopped kimchi and sugar, and cook for 2-3 minutes until warmed through.
  6. In a small bowl, whisk together mayonnaise, Sriracha, and lime juice to make the Sriracha mayonnaise.
  7. Warm the tortillas according to package instructions.
  8. Assemble tacos by topping tortillas with Korean beef, cooked kimchi, diced red onion, and cilantro.
  9. Drizzle with Sriracha mayonnaise and sprinkle with sesame seeds before serving.
