Baked Honey Garlic Chicken

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
  • Kosher salt and freshly ground black pepper, to taste
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/3 cup honey
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon Sriracha (optional)
  • 1 tablespoon cornstarch
  • 2 green onions, thinly sliced
  • 2 teaspoons sesame seeds

Steps

  1. Preheat oven to 400°F (200°C). Lightly oil a 9x13-inch baking dish or coat with nonstick spray.
  2. Season chicken with salt and pepper. Dip each piece into beaten egg, then dredge in panko, pressing to coat.
  3. Place coated chicken in the prepared baking dish. Bake until golden brown and crisp, about 15-20 minutes.
  4. In a medium saucepan over medium-high heat, combine honey, garlic, soy sauce, and Sriracha (if using).
  5. In a small bowl, mix cornstarch with 1/3 cup water. Stir into the saucepan and cook until the sauce thickens, about 1-2 minutes.
  6. Add the baked chicken to the sauce and toss gently to coat.
  7. Serve immediately, garnished with green onions and sesame seeds.
