Ingredients

  • 2 pounds ground beef (80/20)
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon canola oil
  • 6 slices American cheese
  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 3 tablespoons dill pickle relish
  • 1 tablespoon Dijon mustard
  • 6 brioche hamburger buns
  • Romaine or shredded lettuce
  • Sliced tomato
  • Sliced red onion
  • Dill pickle chips

Steps

  1. Make the burger sauce by whisking together mayonnaise, ketchup, dill pickle relish, and Dijon mustard in a small bowl. Set aside.
  2. In a large bowl, combine ground beef with 1 1/2 teaspoons salt and 1 1/2 teaspoons pepper; mix until just combined.
  3. Gently form the mixture into 6 patties, about 1 inch thick and slightly larger than the buns.
  4. Heat canola oil in a large cast iron skillet over medium-high heat.
  5. Cook patties in batches, about 3-5 minutes per side, until charred and cooked to desired doneness.
  6. Top each patty with a slice of cheese during the last minute of cooking to melt.
  7. Serve immediately on hamburger buns with burger sauce and desired toppings such as lettuce, tomato, onion, and pickles.
