Easy Chicken Shawarma

Ingredients
- 2 tablespoons olive oil
- 1 tablespoon water
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- 3 cloves garlic, minced
- 2 teaspoons ground coriander
- 2 teaspoons sweet paprika
- 2 teaspoons ground cumin
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon ground cardamom
- Salt and pepper, to taste
- 2 pounds boneless, skinless chicken thighs
- 1 1/2 tablespoons canola oil
Steps
- Whisk together olive oil, water, lemon zest, lemon juice, garlic, coriander, paprika, cumin, turmeric, cinnamon, ginger, cayenne, cardamom, 1 teaspoon salt, and 1/2 teaspoon pepper in a bowl.
- Combine chicken with the marinade in a large bag or bowl; marinate for at least 2 hours or overnight, turning occasionally.
- Preheat grill to medium-high heat.
- Remove chicken from marinade, brush with canola oil, and season with salt and pepper.
- Grill chicken, turning occasionally, until internal temperature reaches 165°F, about 10 minutes.
- Serve immediately with tzatziki sauce.
Notes
Serve with pita, rice, or a fresh salad in addition to tzatziki sauce.
