Simple Side Salad

Ingredients
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon garlic powder
- Kosher salt and black pepper, to taste
- 4 cups ciabatta, baguette, or sourdough bread, cubed
- 1/2 cup extra-virgin olive oil
- 3 tablespoons red wine vinegar
- 2 teaspoons Dijon mustard
- 3/4 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Kosher salt and black pepper, to taste
- 1 head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 2 Persian cucumbers, sliced
- 1 carrot, grated
- 1/4 small onion, thinly sliced
- 1/3 cup sliced toasted almonds
- 1/3 cup grated Parmesan
- Kosher salt and black pepper, to taste
Steps
- Preheat oven to 400°F (200°C).
- Toss bread cubes with olive oil, parsley, garlic powder, salt, and pepper.
- Spread bread cubes on a baking sheet and bake until golden and crisp, about 10-15 minutes, tossing halfway through.
- In a bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, oregano, garlic powder, salt, and pepper to make the dressing.
- In a large bowl, combine romaine lettuce, cherry tomatoes, cucumbers, carrot, and onion.
- Add the croutons, toasted almonds, and Parmesan to the salad.
- Drizzle with dressing, season with salt and pepper, and toss to combine before serving.
