Simple Side Salad

Ingredients

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon garlic powder
  • Kosher salt and black pepper, to taste
  • 4 cups ciabatta, baguette, or sourdough bread, cubed
  • 1/2 cup extra-virgin olive oil
  • 3 tablespoons red wine vinegar
  • 2 teaspoons Dijon mustard
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Kosher salt and black pepper, to taste
  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 2 Persian cucumbers, sliced
  • 1 carrot, grated
  • 1/4 small onion, thinly sliced
  • 1/3 cup sliced toasted almonds
  • 1/3 cup grated Parmesan
  • Kosher salt and black pepper, to taste

Steps

  1. Preheat oven to 400°F (200°C).
  2. Toss bread cubes with olive oil, parsley, garlic powder, salt, and pepper.
  3. Spread bread cubes on a baking sheet and bake until golden and crisp, about 10-15 minutes, tossing halfway through.
  4. In a bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, oregano, garlic powder, salt, and pepper to make the dressing.
  5. In a large bowl, combine romaine lettuce, cherry tomatoes, cucumbers, carrot, and onion.
  6. Add the croutons, toasted almonds, and Parmesan to the salad.
  7. Drizzle with dressing, season with salt and pepper, and toss to combine before serving.
