BBQ Pineapple Chicken Kabobs

Ingredients

  • 2/3 cup barbecue sauce
  • 2/3 cup teriyaki sauce
  • 3 cloves garlic, minced
  • 1 tablespoon fresh grated ginger
  • 2 pounds boneless skinless chicken breasts, cut into 1-inch chunks
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, cut into 1 1/2-inch pieces
  • 1 sweet onion, cut into 1 1/2-inch pieces
  • 2 tablespoons canola oil
  • Kosher salt and black pepper, to taste

Steps

  1. In a medium bowl, mix barbecue sauce, teriyaki sauce, garlic, and ginger. Reserve 1/2 cup of this mixture and set aside.
  2. Combine the remaining sauce mixture with the chicken in a large bag or bowl. Marinate in the refrigerator for at least 2 hours, up to 8 hours, turning occasionally.
  3. Drain the chicken from the marinade.
  4. Thread chicken, pineapple, bell pepper, and onion onto skewers.
  5. Brush skewers with canola oil and season with salt and pepper.
  6. Preheat grill to medium heat.
  7. Grill skewers, turning occasionally, until chicken reaches an internal temperature of 165°F, about 10 minutes.
  8. Brush skewers with the reserved sauce mixture and cook for an additional 1-2 minutes.
  9. Serve immediately.
