Bitter Melon with Eggs

Ingredients

  • 1 lb bitter melon (2 melons), seeds removed, sliced 1/4 inch thick
  • 3 eggs, beaten with a pinch of salt
  • 1 green onion, sliced
  • 1/2 teaspoon salt, or to taste
  • 1 tablespoon peanut oil or vegetable oil

Steps

  1. Bring a large pot of water to a boil and blanch the bitter melon for 30 seconds.
  2. Drain, rinse with cold water to stop cooking, drain again, and pat dry.
  3. Heat 1/2 tablespoon oil in a skillet over medium-high heat. Add beaten eggs, scramble lightly until just cooked, then transfer to a plate.
  4. Add remaining 1/2 tablespoon oil and green onion to the skillet; stir briefly to release fragrance.
  5. Add bitter melon and salt. Stir fry for 2-3 minutes until starting to soften. If still tough, add a splash of water and cover for 1 minute to steam.
  6. Return cooked eggs to the skillet, stir to combine, and serve as a side dish.
