No-Bake Coconut Lime Energy Bites

Ingredients
- 1 cup packed pitted medjool dates
- 1 cup raw cashews
- 3/4 cup almond flour
- 1/4 cup unsweetened shredded coconut
- 1 Tbsp lime zest
- 2-3 Tbsp lime juice
- 3/4 tsp vanilla extract
- 1 pinch sea salt
- 1/4-1/3 cup unsweetened shredded coconut (for coating)
- 1 Tbsp lime zest (for coating)
Steps
- In a small bowl, combine shredded coconut and lime zest for the coating. Set aside.
- In a food processor, blend pitted dates until small bits remain or a ball forms. Remove and set aside.
- In the same food processor, blend cashews, almond flour, and shredded coconut until a fine meal forms, about 20-30 seconds.
- Add the date mixture back in, along with lime zest, the lesser amount of lime juice, vanilla, and salt. Blend until a tacky dough forms. Add more lime juice or water if too dry, or more shredded coconut if too wet.
- Scoop about 1 Tbsp of dough and roll into a ball.
- Roll each ball in the coconut-lime coating mixture until fully coated. Place on a baking sheet or plate.
- Repeat with remaining dough. Serve immediately or refrigerate.
- Store leftovers covered in the refrigerator for up to 1 week or in the freezer for up to 1 month.
