Cheesy Jalapeño Cashew Dressing

Ingredients

  • 1 cup raw cashews
  • 3/4 cup water
  • 1/4 cup lime juice (or lemon juice)
  • 2 Tbsp nutritional yeast
  • 1 tsp white miso paste (use chickpea miso if soy-free)
  • 1 tsp Dijon mustard
  • 1 tsp maple syrup
  • 3/4 tsp sea salt
  • 2 cloves garlic, peeled
  • 1 small jalapeño pepper, seeds removed, roughly chopped

Steps

  1. Add all ingredients to a high-speed blender.
  2. Blend on high until smooth and creamy, about 1-2 minutes.
  3. Use immediately at room temperature, or refrigerate in a jar for 3-4 hours to chill and thicken.
  4. Add more water to thin if needed after chilling.
  5. Serve with salads, cauliflower wings, wraps, or as a veggie dip.
  6. Store leftovers covered in the refrigerator for up to 5-7 days.
