Cheesy Jalapeño Cashew Dressing

Ingredients
- 1 cup raw cashews
- 3/4 cup water
- 1/4 cup lime juice (or lemon juice)
- 2 Tbsp nutritional yeast
- 1 tsp white miso paste (use chickpea miso if soy-free)
- 1 tsp Dijon mustard
- 1 tsp maple syrup
- 3/4 tsp sea salt
- 2 cloves garlic, peeled
- 1 small jalapeño pepper, seeds removed, roughly chopped
Steps
- Add all ingredients to a high-speed blender.
- Blend on high until smooth and creamy, about 1-2 minutes.
- Use immediately at room temperature, or refrigerate in a jar for 3-4 hours to chill and thicken.
- Add more water to thin if needed after chilling.
- Serve with salads, cauliflower wings, wraps, or as a veggie dip.
- Store leftovers covered in the refrigerator for up to 5-7 days.
