Piña Colada Smoothie

Ingredients
- 3 cups chopped frozen pineapple
- 3/4 cup light coconut milk
- 1-2 tsp honey or maple syrup (optional, if pineapple isn't sweet enough)
- 1 scoop plain protein powder (optional)
- 1-2 oz white rum (optional, for a boozy version)
- Coconut whipped cream, for topping (optional)
- Cherries, for topping (optional)
- Fresh pineapple, for topping (optional)
- Fresh mint, for topping (optional)
Steps
- Add frozen pineapple and coconut milk to a high-speed blender.
- Blend on high until creamy and smooth, adding more coconut milk as needed for consistency.
- Taste and adjust flavor, adding more pineapple, coconut milk, or sweetener as needed.
- For a smoothie, blend in protein powder if desired. For a cocktail, add rum and blend again to combine.
- Pour into glasses and top with coconut whipped cream, a cherry, pineapple slice, and mint if desired.
- Freeze any leftovers into popsicles or ice cubes; blend again with rum or coconut milk before serving.
Notes
Can be made as a non-alcoholic smoothie or blended with rum for a cocktail version.
