Turkey Muenster Focaccia Melt

Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons lemon juice
  • 1-2 cloves garlic, grated
  • kosher salt and black pepper
  • 1/4 cup basil pesto or chopped fresh basil
  • 1 loaf focaccia or ciabatta, halved lengthwise
  • 2 sliced tomatoes or 1-2 cups sliced cherry tomatoes
  • 6-12 thin slices deli turkey
  • 12 slices Muenster cheese
  • 12 slices crispy prosciutto
  • 2 cups arugula or shredded romaine

Steps

  1. Whisk together mayonnaise, olive oil, lemon juice, garlic, and pesto in a small bowl. Season with salt and pepper.
  2. Preheat oven to 400°F (200°C).
  3. Place focaccia halves cut side up on a baking sheet and spread pesto mayo evenly over both halves.
  4. Layer tomatoes, 6 slices of Muenster cheese, turkey, and prosciutto on the bottom half. Arrange remaining cheese slices on the top half.
  5. Bake for 15 minutes, or until the cheese is melted.
  6. Remove from oven and layer greens over the prosciutto on the bottom half.
  7. Place the top half of the focaccia over the greens and press down gently. Rub the top with olive oil.
  8. Return to the oven for 5 minutes, until the bread is toasted and crisp.
  9. Slice into 6 pieces and serve warm or chilled.
