Thai Red Curry Basil Beef Noodles

Ingredients

  • 2 cups shredded carrots
  • 1/2 cup cherry tomatoes, halved
  • 2 tablespoons toasted sesame oil
  • 2 tablespoons lime juice
  • 3 tablespoons rice vinegar
  • 1 cup mixed Thai basil and cilantro
  • 1/2 cup sesame or avocado oil
  • 1/3 cup sliced green onions
  • 1-3 tablespoons Thai red curry paste
  • 4 cloves garlic, grated
  • 1 tablespoon grated ginger
  • chili flakes, to taste
  • 1/2 cup chopped fresh Thai basil (or basil)
  • 1/4 cup chopped fresh cilantro
  • 4 strips bacon, chopped
  • 1 pound ground beef
  • 6 ounces rice noodles
  • 1/3 cup tamari or soy sauce
  • 1/2 cup roasted salted cashews, chopped

Steps

  1. In a bowl, combine carrots, cherry tomatoes, sesame oil, lime juice, rice vinegar, and mixed basil and cilantro. Toss well and set aside as the salad.
  2. Heat the sesame or avocado oil in a large skillet over medium heat until hot but not smoking.
  3. In a heatproof bowl, combine green onions, curry paste, garlic, ginger, basil, cilantro, and chili flakes.
  4. Carefully pour the hot oil over the herb mixture and stir to combine.
  5. In the same skillet, cook the bacon until crisp.
  6. Add the ground beef to the skillet and cook, breaking it up, until browned, about 5 minutes.
  7. Remove from heat and stir in the tamari or soy sauce.
  8. Cook the rice noodles according to package directions, then drain.
  9. Immediately toss the hot noodles with the curry herb oil.
  10. Divide the noodles among bowls, top with the beef mixture, pickled salad, and chopped cashews.
