Thai Red Curry Basil Beef Noodles

Ingredients
- 2 cups shredded carrots
- 1/2 cup cherry tomatoes, halved
- 2 tablespoons toasted sesame oil
- 2 tablespoons lime juice
- 3 tablespoons rice vinegar
- 1 cup mixed Thai basil and cilantro
- 1/2 cup sesame or avocado oil
- 1/3 cup sliced green onions
- 1-3 tablespoons Thai red curry paste
- 4 cloves garlic, grated
- 1 tablespoon grated ginger
- chili flakes, to taste
- 1/2 cup chopped fresh Thai basil (or basil)
- 1/4 cup chopped fresh cilantro
- 4 strips bacon, chopped
- 1 pound ground beef
- 6 ounces rice noodles
- 1/3 cup tamari or soy sauce
- 1/2 cup roasted salted cashews, chopped
Steps
- In a bowl, combine carrots, cherry tomatoes, sesame oil, lime juice, rice vinegar, and mixed basil and cilantro. Toss well and set aside as the salad.
- Heat the sesame or avocado oil in a large skillet over medium heat until hot but not smoking.
- In a heatproof bowl, combine green onions, curry paste, garlic, ginger, basil, cilantro, and chili flakes.
- Carefully pour the hot oil over the herb mixture and stir to combine.
- In the same skillet, cook the bacon until crisp.
- Add the ground beef to the skillet and cook, breaking it up, until browned, about 5 minutes.
- Remove from heat and stir in the tamari or soy sauce.
- Cook the rice noodles according to package directions, then drain.
- Immediately toss the hot noodles with the curry herb oil.
- Divide the noodles among bowls, top with the beef mixture, pickled salad, and chopped cashews.
