Shrimp Stir-Fry with Garlic Chives and Chiles

🇨🇳 China

Servings: 4 servings Total: 30 minutes

Ingredients

  • 1 lb large shrimp, peeled, deveined, tails left on
  • 1/4 tsp kosher salt
  • Freshly ground pepper
  • 1-2 jalapeños, thinly sliced
  • 2 Tbsp cornstarch
  • 1/4 cup (or more) vegetable oil
  • 1 bunch garlic chives (6-8 oz), cut into 2" pieces
  • 1 (2") piece ginger, peeled and cut into matchsticks
  • 1 Tbsp mirin
  • 2 tsp soy sauce
  • 1/4 tsp toasted sesame oil
  • Steamed rice, for serving (optional)

Steps

  1. Spread shrimp on a large plate, sprinkle with salt, toss to coat, and let sit in a single layer for 10 minutes.
  2. Blot shrimp dry with a paper towel and season with pepper. Scatter jalapeños over the shrimp, then sprinkle cornstarch evenly over both. Toss gently to coat.
  3. Heat vegetable oil in a large skillet over high heat, then reduce to medium-high. Arrange shrimp in a single layer, adding remaining chiles to the pan. Cook, turning halfway through, until golden brown, about 4 minutes.
  4. Increase heat to high. Add garlic chives and ginger, tossing until chives are slightly wilted and ginger is fragrant, 30-60 seconds.
  5. Add mirin and soy sauce, toss to combine, then remove from heat and stir in sesame oil.
  6. Transfer to a platter and serve with steamed rice if desired.
