Green Eggs and Ham Frittata

🇮🇹 Italy

Servings: 4 servings Total: 30 minutes

Ingredients

  • 1 bunch chives (about 1½ oz.), divided
  • 8 large eggs
  • ¾ cup heavy cream
  • 1 tsp. freshly ground pepper
  • ½ tsp. kosher salt
  • 2 oz. Parmesan, finely grated (about 1 cup), plus more for serving
  • 2 Tbsp. vegetable oil
  • 4 oz. uncured boneless ham, finely chopped
  • 2 garlic cloves, finely chopped

Steps

  1. Preheat oven to 350°F. Finely chop 6 chives and set aside for serving.
  2. Place remaining chives and eggs in a blender; blend on high until chives are mostly puréed and mixture is green.
  3. Add cream, pepper, salt, and Parmesan; blend until just combined, 5–10 seconds.
  4. Heat oil in a 10-inch ovenproof nonstick skillet over medium heat. Cook ham, stirring often, until beginning to brown, about 2 minutes.
  5. Add garlic and cook, stirring, until fragrant, about 15 seconds.
  6. Pour in egg mixture; stir with a heatproof spatula, incorporating ham and gently agitating eggs, until edges begin to bubble, about 30 seconds.
  7. Transfer skillet to oven; bake until frittata is set all the way through and doesn't jiggle, 13–15 minutes.
  8. Remove from oven and run spatula around edges to loosen. Let cool 5 minutes.
  9. Top with more Parmesan and reserved chives before serving.
