Cottage Cheese Caramelized Onion Dip

Ingredients

  • 1 head garlic, top ¼ inch cut off
  • ¼ cup plus 2 tbsp olive oil, plus more for drizzling
  • 1½ lb mixed onions (sweet, yellow, and/or red), halved and thinly sliced
  • ½ tsp kosher salt, plus more
  • 1 lemon
  • 1½ cups whole-milk cottage cheese (about 12 oz)
  • 2 tbsp crème fraîche
  • ¼ tsp ground pepper, plus more
  • Potato chips, for serving

Steps

  1. Preheat oven to 400°F. Place garlic, cut side up, in a corner of a parchment-lined baking sheet and drizzle with olive oil.
  2. Add sliced onions to the baking sheet. Drizzle with ¼ cup olive oil and 2 tbsp water, toss to coat, and season with salt.
  3. Mound onions in the center of the pan and roast, stirring every 20 minutes, until golden and softened, 40-50 minutes.
  4. Let onions and garlic cool on the baking sheet for at least 15 minutes.
  5. Squeeze garlic cloves from their skins and mash to a paste with a knife. Transfer to a medium bowl.
  6. Finely chop the roasted onions and add to the bowl with the garlic. Grate lemon zest over the mixture.
  7. Cut the lemon in half. Squeeze juice from one half into a blender; reserve the other half for later use.
  8. Add cottage cheese, crème fraîche, remaining 2 tbsp olive oil, and 2 tbsp water to the blender. Blend until smooth.
  9. Scrape the blended mixture into the bowl with the onions and garlic. Add salt and pepper and mix well.
  10. Transfer dip to a serving bowl, sprinkle with extra cracked pepper, and serve with potato chips.
