Extra-Smooth Lemon Curd

Ingredients

  • ½ cup fresh lemon juice
  • 2 tsp finely grated lemon zest
  • ½ cup granulated sugar
  • 3 large eggs
  • 6 tbsp unsalted butter, cut into small pieces

Steps

  1. Whisk lemon juice, lemon zest, sugar, and eggs in a 2-quart heavy saucepan.
  2. Stir in butter and cook over medium-low heat, whisking frequently, until curd is thick enough to hold marks of the whisk and first bubble appears on surface, about 6 minutes.
  3. Transfer curd to a bowl and cover the surface directly with plastic wrap.
  4. Chill until cold, at least 1 hour.

Notes

Can be made up to 1 week ahead; keep chilled in an airtight container with surface covered directly.
