Easy Shrimp Fajitas

Ingredients

  • 1½ lb large shrimp, peeled and deveined
  • 1 tsp kosher salt, plus more to taste
  • 1 Tbsp chili powder
  • 1 Tbsp garlic powder
  • 4 Tbsp vegetable oil, divided
  • 1 large onion, thinly sliced
  • 1 medium green bell pepper, thinly sliced
  • Juice of 1 lime, plus wedges for serving
  • Cilantro leaves, for serving
  • Warm tortillas, for serving

Steps

  1. In a large bowl, toss shrimp with salt, chili powder, garlic powder, and 2 Tbsp vegetable oil. Set aside.
  2. Heat 1 Tbsp vegetable oil in a large skillet over high heat. Add onion, bell pepper, and a pinch of salt; cook, stirring occasionally, until tender and charred at the edges, 7–9 minutes.
  3. Transfer vegetables to a bowl and set aside.
  4. Heat remaining 1 Tbsp oil in the same skillet over high heat. Add shrimp and cook, turning once, until cooked through and curled, about 1 minute.
  5. Remove from heat, add cooked vegetables and lime juice, and toss to combine. Season with more salt if needed.
  6. Top with cilantro and serve with warm tortillas and lime wedges for building fajitas.
