Easy Shrimp Fajitas

Ingredients
- 1½ lb large shrimp, peeled and deveined
- 1 tsp kosher salt, plus more to taste
- 1 Tbsp chili powder
- 1 Tbsp garlic powder
- 4 Tbsp vegetable oil, divided
- 1 large onion, thinly sliced
- 1 medium green bell pepper, thinly sliced
- Juice of 1 lime, plus wedges for serving
- Cilantro leaves, for serving
- Warm tortillas, for serving
Steps
- In a large bowl, toss shrimp with salt, chili powder, garlic powder, and 2 Tbsp vegetable oil. Set aside.
- Heat 1 Tbsp vegetable oil in a large skillet over high heat. Add onion, bell pepper, and a pinch of salt; cook, stirring occasionally, until tender and charred at the edges, 7–9 minutes.
- Transfer vegetables to a bowl and set aside.
- Heat remaining 1 Tbsp oil in the same skillet over high heat. Add shrimp and cook, turning once, until cooked through and curled, about 1 minute.
- Remove from heat, add cooked vegetables and lime juice, and toss to combine. Season with more salt if needed.
- Top with cilantro and serve with warm tortillas and lime wedges for building fajitas.
