Fluffy Diner-Style Buttermilk Pancakes

Ingredients

  • 2 cups all-purpose flour
  • 3 Tbsp sugar
  • 1¼ tsp baking powder
  • 1¼ tsp baking soda
  • 1¼ tsp kosher salt
  • 2 large eggs
  • 1¾ cups buttermilk
  • ½ cup cold seltzer water or club soda
  • 3 Tbsp unsalted butter, melted, plus more for cooking
  • 1 tsp vanilla extract
  • Maple syrup, for serving

Steps

  1. Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  2. In a separate bowl, beat eggs, buttermilk, seltzer water, melted butter, and vanilla extract until combined.
  3. Add the egg mixture to the dry ingredients and whisk until just combined; batter will be slightly lumpy.
  4. Heat a large griddle or skillet over medium heat and brush with butter.
  5. Scoop ½-cup portions of batter onto the griddle and cook until bubbles form and pop on the surface and the underside is golden brown, about 3 minutes.
  6. Flip pancakes and cook until golden brown on the other side, about 2 minutes.
  7. Transfer to plates, brush tops with butter, and serve with maple syrup.
