Fluffy Diner-Style Buttermilk Pancakes

- 2 cups all-purpose flour
- 3 Tbsp sugar
- 1¼ tsp baking powder
- 1¼ tsp baking soda
- 1¼ tsp kosher salt
- 2 large eggs
- 1¾ cups buttermilk
- ½ cup cold seltzer water or club soda
- 3 Tbsp unsalted butter, melted, plus more for cooking
- 1 tsp vanilla extract
- Maple syrup, for serving
Steps
- Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
- In a separate bowl, beat eggs, buttermilk, seltzer water, melted butter, and vanilla extract until combined.
- Add the egg mixture to the dry ingredients and whisk until just combined; batter will be slightly lumpy.
- Heat a large griddle or skillet over medium heat and brush with butter.
- Scoop ½-cup portions of batter onto the griddle and cook until bubbles form and pop on the surface and the underside is golden brown, about 3 minutes.
- Flip pancakes and cook until golden brown on the other side, about 2 minutes.
- Transfer to plates, brush tops with butter, and serve with maple syrup.
