Grilled Italian Sausage with Pickle-y Peppers

Ingredients
- 2 tbsp extra-virgin olive oil, plus more for grill
- 2 small garlic cloves, finely grated
- 1/3 cup distilled white vinegar
- 1/4 cup mild honey
- 2 tbsp balsamic vinegar
- 1 tsp kosher salt, plus more
- Freshly ground pepper
- 1 large white onion, cut into quarters through root end
- 1 lb Italian long hot peppers, pricked all over with a paring knife
- 1 lb sweet coiled Italian sausage or links
- Country-style bread, for serving
Steps
- Prepare a grill for medium-high indirect heat; lightly oil grate with olive oil.
- In a small bowl, stir together garlic, distilled white vinegar, honey, balsamic vinegar, and salt until honey dissolves. Season with pepper and set aside as dressing.
- In a large bowl, toss onion quarters and long hot peppers with olive oil and a pinch of salt to coat.
- If using sausage links, thread horizontally onto 3 parallel skewers, spaced about 2 inches apart.
- Grill sausage over direct heat until browned all over, about 3 minutes per side.
- Move sausage to indirect heat and continue grilling, turning occasionally, until cooked through, 8-10 minutes. Transfer to a platter.
- Meanwhile, grill peppers and onion over direct heat, turning often, until peppers are blistered (about 2 minutes) and onion is charred at the edges (6-8 minutes). Return to the large bowl.
- Pour dressing over vegetables and toss to coat, separating the onion layers. Season with more salt and pepper if needed.
- Mound vegetables on top of sausage and drizzle with any excess dressing. Serve with country-style bread.
