Peruvian-Style Tofu with Creamy Cilantro Sauce

Ingredients
- 2 tbsp extra-virgin olive oil
- 2 tbsp soy sauce
- 2 tsp kosher salt
- 2 tsp ground cumin
- 2 tsp sugar
- 2 tsp paprika
- Freshly ground pepper
- 2 blocks (14 oz each) firm tofu, drained
- 1 bunch cilantro, bottom 1 inch of stems removed, cut into 2 inch pieces
- 6 scallions, cut into 2 inch pieces
- 1/2 avocado, pitted and peeled
- 1 serrano chile, stem removed
- 1 small garlic clove
- 1/4 cup fresh lime juice
- 1/4 cup mayonnaise
- 1/2 tsp ground cumin
- Vegetable oil, for grill
Steps
- In a bowl, whisk together olive oil, soy sauce, salt, cumin, sugar, paprika, and pepper.
- Slice tofu blocks into thick planks and coat with the marinade; let sit for at least 15 minutes.
- Preheat a grill or grill pan to medium-high and oil the grates.
- Grill tofu until charred and heated through, about 3-4 minutes per side.
- Grill scallions until softened and lightly charred, about 2 minutes per side.
- In a blender, combine cilantro, avocado, serrano chile, garlic, lime juice, mayonnaise, and cumin; blend until smooth to make the sauce.
- Arrange grilled tofu and scallions on a platter and drizzle generously with the cilantro sauce before serving.
