Smashed Zucchini with Tahini-Ginger Dressing

Ingredients
- 2 lb medium zucchini (about 5), halved and cut into 2-inch pieces
- 1 Tbsp kosher salt, plus more to taste
- 1-inch piece ginger, peeled and finely grated
- 1 garlic clove, finely grated
- 1/4 cup plus 1 Tbsp tahini
- 1/4 cup soy sauce
- 2 Tbsp dark brown sugar
- 2 Tbsp unseasoned rice vinegar
- 1 Tbsp sriracha
- 2 tsp toasted sesame oil
- Toasted white sesame seeds, for serving (optional)
- Cilantro sprigs, for serving (optional)
Steps
- Place zucchini pieces and salt in a large resealable plastic bag. Seal and gently smash with a rolling pin until some pieces break up, keeping some larger pieces intact.
- Transfer zucchini to a colander set over a bowl and let drain for 30 minutes to 1 hour.
- Meanwhile, whisk together ginger, garlic, tahini, soy sauce, brown sugar, rice vinegar, sriracha, and sesame oil in a large bowl until smooth.
- Add drained zucchini to the dressing, pressing out excess water first. Toss to coat, then taste and add more salt if needed.
- Transfer to a serving bowl and top with sesame seeds and cilantro, if desired.
