Pickle Coleslaw

Ingredients

  • 3 tablespoons mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons sugar
  • 1½ teaspoons kosher salt
  • 1 teaspoon red jalapeño chile flakes or ½ teaspoon crushed red pepper flakes
  • ¼ large head green cabbage, thinly sliced (about 8 cups)
  • 1 large carrot, peeled and coarsely grated (about 1 cup)
  • 2 cups coarsely chopped dill pickles, plus slices for serving
  • ¼ cup chopped dill, plus more for serving

Steps

  1. In a large bowl, mix mayonnaise, vinegar, sugar, salt, and chile flakes until combined.
  2. Add cabbage, carrot, chopped pickles, and dill; toss to coat.
  3. Cover and chill at least 2 hours, up to 12 hours.
  4. Just before serving, top with pickle slices and extra dill.
