Pickle Coleslaw

Ingredients
- 3 tablespoons mayonnaise
- 2 tablespoons apple cider vinegar
- 2 tablespoons sugar
- 1½ teaspoons kosher salt
- 1 teaspoon red jalapeño chile flakes or ½ teaspoon crushed red pepper flakes
- ¼ large head green cabbage, thinly sliced (about 8 cups)
- 1 large carrot, peeled and coarsely grated (about 1 cup)
- 2 cups coarsely chopped dill pickles, plus slices for serving
- ¼ cup chopped dill, plus more for serving
Steps
- In a large bowl, mix mayonnaise, vinegar, sugar, salt, and chile flakes until combined.
- Add cabbage, carrot, chopped pickles, and dill; toss to coat.
- Cover and chill at least 2 hours, up to 12 hours.
- Just before serving, top with pickle slices and extra dill.
