Halal Cart Chicken Salad

Ingredients
- ¼ cup extra-virgin olive oil
- ½ tsp dried oregano
- ½ tsp ground coriander
- ½ tsp ground cumin
- ½ tsp ground turmeric
- 3 garlic cloves, finely grated, divided
- 4 tbsp fresh lemon juice, divided
- 2 cups shredded rotisserie chicken
- 1 tsp kosher salt, plus more
- 1 cup plain whole-milk yogurt
- ¼ cup mayonnaise
- ½ tsp sugar
- Freshly ground pepper
- 1 small red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1 large head iceberg lettuce
- 1 cup salted pita chips
Steps
- Heat olive oil in a small saucepan over medium heat. Add oregano, coriander, cumin, and turmeric; cook until fragrant, about 30 seconds.
- Transfer spiced oil to a medium bowl and whisk in 1 grated garlic clove and 3 tbsp lemon juice.
- Add shredded chicken to the bowl and toss to coat; season with salt. Set aside.
- In a small bowl, whisk together yogurt, mayonnaise, sugar, remaining 2 grated garlic cloves, 1 tbsp lemon juice, and 1 tsp salt to make the dressing. Season with pepper.
- In another bowl, combine sliced red onion and halved cherry tomatoes; season with salt and toss.
- Cut the lettuce into 6 wedges, then cut each wedge into 3 pieces.
- Spread three-fourths of the dressing on a platter. Top with lettuce, chicken, onion-tomato mixture, and pita chips.
- Drizzle remaining dressing over the top and season generously with pepper.
