Halal Cart Chicken Salad

Ingredients

  • ¼ cup extra-virgin olive oil
  • ½ tsp dried oregano
  • ½ tsp ground coriander
  • ½ tsp ground cumin
  • ½ tsp ground turmeric
  • 3 garlic cloves, finely grated, divided
  • 4 tbsp fresh lemon juice, divided
  • 2 cups shredded rotisserie chicken
  • 1 tsp kosher salt, plus more
  • 1 cup plain whole-milk yogurt
  • ¼ cup mayonnaise
  • ½ tsp sugar
  • Freshly ground pepper
  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 large head iceberg lettuce
  • 1 cup salted pita chips

Steps

  1. Heat olive oil in a small saucepan over medium heat. Add oregano, coriander, cumin, and turmeric; cook until fragrant, about 30 seconds.
  2. Transfer spiced oil to a medium bowl and whisk in 1 grated garlic clove and 3 tbsp lemon juice.
  3. Add shredded chicken to the bowl and toss to coat; season with salt. Set aside.
  4. In a small bowl, whisk together yogurt, mayonnaise, sugar, remaining 2 grated garlic cloves, 1 tbsp lemon juice, and 1 tsp salt to make the dressing. Season with pepper.
  5. In another bowl, combine sliced red onion and halved cherry tomatoes; season with salt and toss.
  6. Cut the lettuce into 6 wedges, then cut each wedge into 3 pieces.
  7. Spread three-fourths of the dressing on a platter. Top with lettuce, chicken, onion-tomato mixture, and pita chips.
  8. Drizzle remaining dressing over the top and season generously with pepper.
